Almond Joy Ice Cream Bars

Ingredients:

For the Ice cream:
2 frozen bananas
3 tbsp. almond butter
2 tbsp. shredded coconut
2 tbsp. almond milk
1 tsp. vanilla extract
Blend in food processor, transfer to parchment
lined square pan and freeze for 25 min.


For the Caramel:
3 tbsp. almond butter
3 tbsp. maple syrup
1 tsp. almond milk
Pinch of sea salt
Blend in food processor, then add mixture to the same freezer pan and
freeze for 3 more hours
For the Topping:
1 bar of vegan dark chocolate, (about 3 grams) melted
9 whole almonds


Directions:
01. Blend ice cream and freeze for 25 minutes. Blend caramel and freeze for 3
hours. Remove pan from freezer, remove bars from the pan by lifting up the
parchment. Leave on the parchment and place on a cutting board. Cut into 9
bars.


02. Add one whole almond onto each bar then spoon on the melted chocolate over
the entire bar. Transfer to a plate and let sit in freezer until chocolate is set, about
5 minutes. Enjoy! These cool and delicious chocolate almond ice-cream bars are
perfect for sharing and delicious for a hot summer night.
