
Date Night Cookies
Ingredients:
2 egg whites
1 cup chopped dates (pitted)
2 bananas (mashed)
1/3 cup pumpkin seeds
1/3 cup flax (ground)
½ cup walnuts (chopped)
1½ cups gluten free rolled oats
Directions:
01. Pre-heat oven to 350 degrees (f) then line a cookie pan with parchment.
02. Whip egg whites with a fork then add the chopped dates. Mix together.
03. Mash bananas and add to mixture.
04. Add pumpkin seeds, flax, walnuts and oats. Mix everything together.
05. Plop mixture from a teaspoon and bake for 20 – 25 minutes. Remove from oven
and let cool on a wire rack. These delicious oatmeal date cookies are great in the
evening with a cup of herbal tea. They are high in fibre and are not too sweet.
