Lovely Lemon Coconut Muffins

Ingredients:
1¾ cup gluten-free flour
½ cup coconut flour
½ cup organic coconut sugar
2 tsp. baking powder
1 tsp. baking soda
¼ tsp. sea salt
1 cup coconut milk
1 tsp. apple cider vinegar
¼ cup coconut oil (melted)
3 tbsp. lemon juice
3 tbsp. lemon zest (finely grated)
1 tsp. vanilla extract


Directions:
01. Pre-heat oven to 375 degrees F and lightly oil a non-stick 12 muffin tin.
In a large bowl, mix dry ingredients thoroughly. In another bowl, mix wet
ingredients. Fold dry ingredients into wet ingredients.
02. Scoop into the muffin pan to about ¾ full. Bake for about 20 minutes, or until
toothpick inserted in the middle comes out clean. Let cool for 5 minutes then
transfer to wire rack. Let cool for bit longer, add some vegan butter and enjoy!
