
Oatmeal Cookies
Dry Ingredients:
1 cup gluten free rolled oats + ½ cup for later
1 cup gluten free finely ground oat flour
½ tsp. baking soda
½ tsp. baking powder
¼ tsp. sea salt
Wet Ingredients:
¼ cup coconut oil (melted)
¼ cup coconut sugar
4 tbsp. maple syrup
2 flax eggs (2 tbsp. ground flax and 6 tbsp. water, whisk together and let sit
for 15 minutes)
1½ tsp. pure vanilla extract
Directions:
01. Pre-heat oven to 350 degrees F and line a cookie sheet with parchment paper.
02. Make flax egg and set aside.
03. Mix dry ingredients thoroughly (except the ½ cup rolled oats), then mix all wet
ingredients, including the flax egg. Mix wet and dry ingredients together, then add
the extra ½ cup of rolled oats and fold together.
04. Plop a heaping teaspoon of the mixture onto the parchment lined cookie sheet.
Flatten the cookies with a fork. Bake for about 12 minutes. Transfer to a wire rack
and let cool completely. Enjoy these sweet and chewy treats with a cup of tea.
